Coleslaw.

Gotta be honest, I’m not a massive fan of mayo based coleslaw because they can get a bit sickly for me sometimes, I much prefer yoghurt based ones!

You will need (Serves 4-6 as a side):

  • 1/4 red cabbage, sliced

  • 1/4 white cabbage, sliced

  • 1 large carrot, grated

  • 4 spring onions, sliced

  • Handful of parsley, chopped

  • 1 cup of Greek yoghurt

  • 2 tbsps apple cider vinegar

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • Celery salt to taste

Method:

Mix your yoghurt, apple cider vinegar, lemon juice, Dijon mustard and celery salt in a bowl. Add your cabbage, carrot, spring onion and parsley and mix well! Serve up with another sprinkling of parsley and enjoy!

Tip!

If you’re prepping this in advance then only mix the yoghurt and veggies before serving because the celery salt will start to draw out water from your veggies!
