Tabbouleh Orzo.

I love tabbouleh as a side for lunches but recently I was stuck when I ran out of grains. Luckily I managed to pivot with some orzo and I might actually prefer this to the classic grain version?!

You will need (Serves 2-3):

  • 150g orzo

  • 175g cucumber, deseeded and diced

  • 3 medium tomatoes, diced

  • Small handful of flat leaf parsley, finely chopped

  • Small handful, of mint, finely chopped

  • 60ml extra virgin olive oil

  • Juice of half a lemon

Method

Cook pasta according to packet instructions and allow to cool. Mix with other ingredients and enjoy!
