French Onion Soup.

French Onion Soup is so much easier to make than I once thought. I also very much recommend the pairing of cheesy crumpets! This is also a vegetarian version of the soup which is easily made vegan if you substituted the butter and cheese for a plant based alternative.

You will need (Serves 2):

  • 4 onions, sliced

  • A knob of butter

  • 2 cloves grated garlic

  • 1tbsp olive oil

  • 1/2 tsp dried thyme

  • 1 bay leaf

  • 500ml veg stock

  • 1 tsp sugar

  • 2 tbsp balsamic vinegar

  • 1 tbsp flour

  • 1tsp sugar

  • Salt to taste

Method:

  1. Heat a pan over a low heat and add your butter, olive oil, garlic and onions. Cook for around 10mins until softened.

  2. After 10mins, add 100ml water and cover to cook for around 30mins. The onions will start to go jammy but if they stick just add more water. I added around 100ml every 10 mins

  3. Add your flour, thyme, balsamic vinegar and stir.

  4. Pour in your stock, add your bay leaf and sugar and allow to simmer for around 15 mins.

  5. In the meantime, toast your crumpets for 5mins - you want them to be crunchy! Add a heap of cheddar on top and bake until melted.

Tip!

To make this vegan, simply switch the butter for a plant based alternative.
