Three Bean Salad.
Iām a sucker for meal prep and this Three Bean Salad is a great option for getting in a filling meal with lots of goodness and still keeping the cost down.
You will need (Serves 2):
1/2 tin each of butterbeans, cannellini beans, kidney beans
1/2 diced red pepper
2 diced gherkins
Half a stick of celery, sliced
1/4 finely sliced onion
Mint
Lemon, extra virgin olive oil, salt and pepper for seasoning (to taste)
Method
It is all into a bowl and mix it all up!
Tip!
Not a fan of gherkins?! Swap them out for some diced and deseeded cucumber and add a tablespoon of red or white wine vinegar into the dressing.
