Three Bean Salad.

Iā€™m a sucker for meal prep and this Three Bean Salad is a great option for getting in a filling meal with lots of goodness and still keeping the cost down.

You will need (Serves 2):

  • 1/2 tin each of butterbeans, cannellini beans, kidney beans

  • 1/2 diced red pepper

  • 2 diced gherkins

  • Half a stick of celery, sliced

  • 1/4 finely sliced onion

  • Mint

  • Lemon, extra virgin olive oil, salt and pepper for seasoning (to taste)

Method

It is all into a bowl and mix it all up!

Tip!

Not a fan of gherkins?! Swap them out for some diced and deseeded cucumber and add a tablespoon of red or white wine vinegar into the dressing.
