Lemon Pepper Chicken Wings.
I promise you that this is one of those recipes that is life-changingly good. If I could have this every day then I definitely would!
You will need (Serves 2-4):
1.2kg chicken wings
50g salted butter
Zest of 2 lemons
Juice of 2 lemons
Black pepper to taste - I use 2-3tsp
Salt to taste
Small handful of parsley, finely chopped
250g plain flour
Spray oil
Method
Separate your wings into drums and flats by cutting through the joint. Lay out onto a flat surface and pat dry. This will help the wings become crispy.
Add your flour to a bowl and individually coat each wing until they are all generously covered in the flour.
Spray a layer of oil onto the bottom of a non stick baking tray and lay the wings on top. Coating the wings in another layer of spray oil, bake at 200 degrees for 30mins, making sure you turn the wings every 10 mins to help them crisp on all sides
Once the wings are cooked and set aside, in a pan melt your butter. Once melted pour into a large mixing bowl big enough to mix the wings. To the butter, add the lemon zest and juice, black pepper, salt (if using) and chopped parsley. Add in the wings, and mix until they are thoroughly coated.
Transfer the wings to a serving dish and spoon over any excess coating.
