Nut Free Pesto.

Is it an unpopular opinion to not like pine nuts? I love pesto and pine nuts have no business being THAT expensive so this is a budget friendly, nut free version! This batch makes around 10 portions that freeze perfectly in ice cube moulds for quick meals.

You will need (Serves 10-12)

  • 250g bag of spinach

  • 50g basil

  • 250 extra virgin olive oil

  • 60g grated parmesan

  • 4 garlic cloves

  • Juice of 2 lemons

  • Salt to taste

Method

Add your spinach, basil and extra virgin olive oil to a food processor. Blend it down for a couple of seconds to create more space before going in with 60g of grated parmesan, 4 garlic cloves, seasoning to taste and the juice of two lemons. Blend to your desired consistency.
