Pizza Pastries.

You definitely need to add the ingredients for these to your next shop - they are so easy to customise and perfect to try with kids during the school holidays. My go-to puff pastry from Tesco is also vegan too!

You will need (Makes 8):

  • 1 packet of ready rolled puff pastry

  • 8 tsp of tomato puree

  • Pizza pepperoni, chopped- this doesn’t use the whole packet but if I’m not using the rest for homemade pizza then I freeze in portions to make these again

  • Handful of jarred jalapeños, chopped

  • Around 1 cup of pizza mozzarella, grated

  • 1 egg, beaten

  • 2-3tsp dried oregano

Method

  1. Unroll your packet of puff pastry and cut into 8 equal sized rectangles. On each piece of pastry, spread a tsp of tomato puree.

  2. Sprinkle with oregano, your toppings (pepperoni and jalapeños in this case) and a moderate amount of cheese.

  3. Fold over one corner and brush with egg wash. Fold over the opposite corner, sticking to the egg wash and brush over the top with more egg.

  4. Sprinkle with some more oregano and bake at 180 degrees until the pastry is golden and the cheese is melted.
