Spicy Sweet Potato Wedges.

Iā€™m trying to be more mindful creating different ideas for side dishes rather than just turning to rice or white potatoes and these are defo a new favourite in the house!

You will need (Serves 3-4)

  • 1kg sweet potatoes

  • 1/2 tbsp cayenne pepper

  • 1 tsp garlic granules

  • 1 tsp onion powder

  • Salt to taste

  • 2tbsp olive oil

Method

  1. Wash your sweet potatoes well, pat dry and cut into wedges. Be careful because they can be pretty difficult to cut through sometimes!

  2. Add your potatoes into a bowl, drizzle with oil and the seasonings before tossing to coat well. Arrange in a single layer on a baking tray, skin side down.

  3. Bake in a 200 degree oven for 45-55 mins. The flesh is usually cooked after 35-40mins and the extra time allows the skin and edges to go slightly crispy.
