Tomato & Basil Pasta.

Pasta based dishes are some of my favourite to create because you can put together fresh, cheap ingredients to make something amazing, just like this!

You will need (Serves 2):

  • 150g dried pasta, I used fusilli

  • 125g cherry tomatoes, halved

  • 3 large salad tomatoes, roughly chopped

  • 4 cloves of garlic, sliced

  • Small handful of basil, chopped

  • Salt and pepper to taste

Method

  1. Cook your pasta according to packet instructions.

  2. Meanwhile in a pan on a medium heat, add all your tomatoes and a pinch of salt. The salt extracts the juices from the tomatoes and stops the garlic browning. Stir occasionally.

  3. The tomatoes should have softened after about 10-15mins. Squash them lightly with your stirring spoon to create more of a sauce. You can use a potato masher for this if you prefer.

  4. Add your pasta with a splash of reserved pasta water and stir. Add salt and pepper to taste along with your basil and enjoy!
